He was a villain the crowd grew attached to thanks to his effort in trying to keep his family on top. Once he lost, Solo then came in, who bastardized the Bloodline and hurt Paul Heyman, the most defenseless guy out of the whole group. Roman being removed of his vice of being champion, as well as being unable to defend someone he actually gave a shit about, was enough to get the crowd behind him. It's simple storytelling with high emotional investment.

This really shouldn't come as a surprise, seeing as how a lot of beloved faces were once despised heels, who did the scummiest shit to the crowd's favorites. This is just how wrestling stories go.
