well the ref could DQ the cheater and convert the match into a singles match but then again would make no sense because the cheater could just then attack one of the other two wrestlers to end it in a DQ

Yep, the same way tag matches turn into handicap matches when that happens. It's up to the injured guy to recover and come running back out before the finish.
