Because it's fun, it's nice to have a miniature wrestling roster on your shelf. In a way it's like having your own little wrestling museum. For example, having figures of Benoit or fuckin' Vince McMahon, Those are/will essentially be relics. I got rid of my old WWE toys because they were just shit but I still hold on to my Lesnar. I'm not really collecting right now but I might again in the future.

I don't collect wrestling dolls but I collect Transformers as an adult, I spend too much time looking at the catalogues as a kid and my family wasn't very rich so it stuck with me. It's admittedly a manchild hobby but I keep it on a budget. It makes me happy to pick up a toy I never had and own it. It's kinda like completing achievements for my childhood and feel happy about nostalgia for a bit. I presume that's what wrestling figures are for collectors too.
