The appeal of shounen is just seeing a (usually) barebones story unfold and seeing characters fight for episodes on end like Dragon Ball or Naruto.
The appeal of mecha is usually either the characters or the robots' designs. It's very varied though, and you get over the top stuff like G Gundam (which is a lot like pro wrestling actually).
Shoujo's for girls. Idol anime is for lonely guys and girls that want to self insert. Seinen usually tells darker stories for adult men.
I'm probably missing some genres and demographics.
