I agree there's not enough crossover in Dynamite, it is just a cleanly formatted segment after segment where each segment has no relation to the previous one. If AEW believed in show writers or runners they would do things like episode long narratives that are introduced at the start and then paid off in the main event. Or they would tease multiple crossovers interactions where different storylines/feuds intersect with each other.
