Do you even know how much it would cost to get all those wrestlers to agree to their likenesses to be used? They'd all want money for that and some of the bigger names would probably want a cut of the profits too. This is why there will never be a remaster of those old wrestling games, the logistics involved would be a nightmare. It's totally unworkable.
