I think it's more how often you get worked mid-match. How often do you go, "Fuck!" when a real hard chop hits someone across the chest. How often do you go, "That nigga is DEAD." when you see someone take a powerbomb. More of those = more "realistic"

Realism doesn't matter as much as coherence.

I's say Flair vs Steamboat 1 is one of my favourite ones. Both of them work like they want to win at all times. When Steamboat fails a pin, he keeps working, doesn't sit around with a dumb face
