Steak, real cuts of meat, that's what tastes good rare and medium-rare due to all the juices and blood and softness. Ground beef needs to be solid and hold together, not fall apart into mushy dog-food when you take a bite. There's no flavorful juices left in the meat, it's fucking ground up and all separated.
