Why is there not much wrestling anime/cartoons? Seems like they could take many more liberties with what happens in and out of the ring.

Because at this point the booking is the most interesting aspect of wrestling nowadays. Sure the wrestling itself is exciting, but with the business so exposed it's impossible to try and simulate it as something truly real.

WWE owns everything that would be make an interesting anime but they gave up on their Japanese market so no japan studio to make a proper anime and I can’t recall any cartoon they were involved with that was actually interesting. There are wresting anime’s like Tiger Mask or Kinnikuman if you want to check that out

You see OP, cartoons take a long time to make, and generally only wrestling companies would be interested in funding them. However due to the length by the time the episodes would come out the storylines would already be different so there'd be no point to it.
