The Yakuza games usually have extensive side games, in previous ganes there was a ‘Majima Construction’ side game where you could employ different NJPW wrestlers to fight in your army. Then again in Yakuza 6 there was a gang war side game you could employ newer NJPW wrestlers to fight in your gang. So I suspect this is something similar where you can employ Kenny Omega to fight in your army. The ‘card’ term is new although the concept probably isn’t.

How do I get into the Yakiza series? Never played but I think I'd enjoy it. Which one should I play first? Just start on the oldest one and play in order?

0 is a prequel game that you can start with or you could start with Kiwami 1 or 2 because those are remakes of the first two games

You can either start with Yakuza 0 or Yakuza Kiwami.
0 is a prequel but it works just as well as the starting game as Kiwami does.
The original Yakuza on PS2 was considered pretty mediocre when it released and I expect its aged like shit too. Regardless whether you decide to start with 0 or Kiwami definitely play 0 at some point as it's considered widely by most as the best game in the series.
