Moments vs. Matches

Can someone explain to me the allure of booking strictly with the end goal of match quality in mind, like AEW seems to currently do with Omega and his "dream matches"?

I like great matches as much as the next wrestling fan, but if they happen in a cold, storyless way, they won't be memorable, right? It just seems like such an anonymous, homogenous mass of flips, finisher spamming and kickouts that there isn't really anything specific to look back fondly on.

Contrast that with WWE and their big moment-focused booking, which a lot of indie wrestling fans malign. Hogan slamming Andre, Macho Man reuniting with Liz etc. are really personal to a lot of fans and they're moments that will be talked about and included in video packages for as long as wrestling will be around and probably even after. It just seems like a way more satisfying and smarter approach when it comes to booking.
