It's currently pretty meh. There's a few decent ones but the real good era of joshi is long past. Just watch the stuff from the 80s and 90s when they actually trained them to be wrestlers instead of idols, and the violent dykes were still brutalizing trainees to weed out the shitters.

Modern stuff isn't must watch but I've enjoyed the current production values of Stardom and TJPW and the former had a genuine great match the other night between Syuri and Hashimoto, on that note Sendai Girls (Meiko Satomura's company) has killer matches sometimes

80s AJW is some of the greatest rassling you'll ever see.
90's Joshi is what AEW thinks it is, the craziest moves you'll ever see, but they also manage to sell and show struggle and without the obvious cooperation.
Modern joshi is trash, even the fans will tell you that you pick a waifu and root for her as opposed to the talent winning over your support.
