From that game, one good theme or frame for an animal rpg might be: some humans stray into a forest, and the faery king orchestrates a "reverse wild hunt" ritual where the prey hunts the hunters in a sacrifice to ensure the human hunt fails. So you can have warrior rabbits hares foxes deer etc hunting humans in reverse because of changeling magic etc.
A fairly interesting storytelling mechanic of Under Hollow Hills which I have not seen before is that it is based upon seasons, there are two descriptor lists for each character a "summer" form and a "winter" form, and use of their powers cause the characters to gradually step from summer to winter in appearance, they shift visually and strike off the text descriptors from the list etc. Just thought that was an interesting unique ttrpg mechanic
