Gnollish is well documented in their texts and many people who interact with them on a daily basis, or are interested in learning about their race as a whole, have partial or full knowledge of their language.
As to why you've encountered goblins that spoke in Gnollish, in order to answer this you must know beforehand that the first ones were dwarves who became gradually corrupted by demons over the years and eventually escaped civilization to go to the Wild Lands (home of beastfolk). Some of them knew Gnollish and imparted this knowledge to fellow goblins as to facillitate communication and establish alliances with nearby gnoll tribes, collaborating with them in hunts and fights against other packs. Gnolls used to trust goblins due to their green skin colour, which they associated to Nature Spirits. Even Luna initially thought of them as dwarves "turned natural" and let them live in her forest, ignorant of their demonic corruption.
This naivety didn't do gnolls any good, as goblins used to betray these pacts by violating and / or murdering them when they least expected it after gaining their trust. This ended up tarnishing their reputation. Such alliances rarely happen nowadays, as beastfolk have learned not to trust greenies and despise them with a passion. The number of Gnollish speaking goblins has been declining since then, but there are still a few of them hanging around. For example, greenies that live in dens near your tribe are known to be able to speak the same tongue as gnolls do.
>How do dwarves and humie anustians view each other?If they're angels, they treat each other with fairness and fraternity. Otherwise, dwarven anustians (fortress inhabitants) don't interact with humans at all and would rather keep their fort location a secret. They are spiteful towards humies due to their past history with them. Anu doesn't send his few human followers to the fortress as they are likely to receive even worse treatment than beastfolk do, if not straight up be executed on the spot.
