Plasma is one of the most versatile energy weapons available to the Imperium, because there's so many different ways you can calibrate it. Sure some things like the average infantry plasma gun or plasma cannon fire blobs which are affected by gravity. But then you've got things like the Plasma Destroyer or Plasma Annihilator that fire plasma more like an energy beam which isn't affected by gravity.
And then there's the Tau who have their own unique thing where their pulse rifles accelerate a solid slug with such energy it turns into plasma, which is then encased in its own solenoid energy shell which contains the plasma until it hits something solid. Thus their long range weapons and even their sniper weapons aren't affected by gravity or the bloom effect until they detonate.
Lastly if I'm not mistaken the Imperium has actual "Plasma Shells" which are conventional metal encased shells that detonate into a plasma burst, I'm looking up the source for that.
