We know she can manipulate and potentially slow her bleeding. If we puncture her thigh, we give her the choices of: Lose mobility and slow the flow of blood. Or remove it, retain mobility, but bleed faster.
Anya's a specialist grappler, and if we're losing the knife anyway we might as well try and slow her down make an opportunity to use that skill. All we need is 3 seconds on the ground and it's over, no need to batter and chop her to bits.
