The 1x1 bricks with clips definitely help the stability of the elbow. The pin above the elbow definitely has enough friction to hold a pose, but probably can't go too heavy with accessories. If it becomes a nuisance you could try committing some sacrilege by putting a spot of teflon tape around the pin - don't think it needs it though. I'm interested in your idea, so if you don't have the parts on-hand to prototype the stability with, I'll try to keep up.
