Hell, i only grudgingly include Kenner as part of the EU, only because they started including that shit into toy designs into the tv shows.
Then there's all the LucasArts SNES games too....... plus pre-90s games.
But that's just me and my view of the EU up until they ran out of ideas and created the Vong. After that they started including a ton of the weird shit that wasn't even considered before.
Thank god the prequels came out and revived the series again.
Also, the fact that they used the RPGs books is because they listed all the shit that appeared in the movies in a few books. Not because they created any interesting ideas. LucasFilms themselves had no source books and didn't want to waste money in bringing Zahn to look through their archives for however months he'd needed to get material.
