Have fresh out of the factory ones be more monotone like in TPM, while the older ones that have seen a lot of action have more personality.
Maybe some just want to fulfill their programing, while others just want to survive.
The "What Dat? Dat Nothin'" voices of the SBDs in ROTS are terrible, and I wish Lucas would have special editioned them to have TCW SBD voice box.
Funny how we never got anything with the PK droids outside of TPM.
