I plan to get into assembling/painting model kits when I'm older. Seems like a good hobby, but I never had the patience.
The only complex one I assembled was pic related. It has a really complex skeleton with lots of joints, and then you have to stuff the skeleton inside the rubber skin. I remember spending lots of nights scratching my head building it when I was 13. It was fun, but I barely had the patience to do it.
I never painted it though, but it didn't really need it (although the manual implies that the white parts should be painted)
