A lot of it's lighting. I don't know what you're working with, but I switch between two and four normal desk lamps with white bulbs between the 29 and 72w. It's a lot of playing around, but normally I can figure out something that will get the desired results.
And, definitely recommend a DSLR or a camera with options like shutter speed because they give you a lot more options too (my phone sucks so I can't speak for what a decent camera phone will do.)
