Dentin (the yellow part) is still regenerated after the ameloblasts are gone but that flows from the blood supply inside your tooth not the outside. Odontoblasts and osteoclasts just regenerate the bone surrounding the tooth. You cant regrow enamel (the white part). Sealants just remove the surface that bacteria cling to. You can still get decay around sealants.
If you have good saliva you should be able to neutralize anything in your diet because the saliva buffers well in a healthy patient. When your shit is retarded the saliva doesn't function as well or your diet is so acidic your body cant neutralize it in its own.
