It probably became popular with that Wendigo movie in 2001, who the director apparently said came from a story a teacher once told him about a deer monster.
https://www.youtube.com/watch?v=Z3fdNQZsUV0I like the idea that wendigo may eat their own flesh out of desperation but they need a physical form so they may pick up other parts of carcasses to replace parts of their bodies that they either ate or rotted off. If they can only eat human flesh, they would still kill and try to eat animals. It plays along with their gluttony.
