Just heat up the figures before pulling them apart.
You can use a hair dryer/heat gun or dunk the figure into boiled water.
I prefer using hot water, since it seems to cover the figure more evenly than a hair dryer, and if you're going to repaint the things, you'll want to wash them off, anyways.
For extra grip and to avoid bruising your fingers and palms on the spikier parts of the figures try wrapping the limb in wash cloth or towel before pulling them apart.
If something is stuck just go slow but firm and steady straight out after reheating it a few times.
Consider taking parts off you aren't planning on removing so as not to warm or loosing another joint. For instance, let's say you want to swap out the shins and boots on a figure, but they're stuck in the knee. Take the foot off first so you don't loosen up the ankle joint while trying to pull out the shin. This also gives you more surface wrap your big gorilla mitt around the shin piece.
The 2.0 Torso is rather tricky, since it's a barbell shaped part that can pop in and out of either the bottom of the chest or top of the abdomen.
If you want to pull that out of a body segment I recommend wrapping a lot of soft twine around it and pull straight out after heating up the body part a lot.
