There's lots of really good vehicles and playsets to choose from that were released over the years, some of which are pretty affordable if you go as far back as the 90's Power of the Force 2 collection or Phantom Menace. The figures are also great, there's websites with action figure databases so you can browse all the different figures made for a particular character.
https://jedibusiness.com/Some sculpts on older figures are pretty ass, but most of the newer stuff is great. I'd recommend picking up figures from around 2003-present as that's about when the figures started to up articulation and quality. Now that isn't to say that there aren't some gems prior to that point, but most of the good figures you'll want to collect from later years, where as the vehicles though are good from most eras starting roughly with Power of the Force 2. Some of those vehicles are dated, and were updates of the original vintage toy molds from the 70's/80's, where as other's like the T-16 Skyhopper were brand new. There's also several good Millennium Falcons to choose from. If you want to spend big bucks there's a giant one from the The Vintage Collection, but it costs quite a bit. There's also a re-tooled POTF2 Falcon in the Saga Collection that's fairly nice and a pretty decent one in the Force Awakens line. I actually like the interior of the FA one better, because I like the Dejerick table and the booth with it much better than in the Saga one, which doesn't even have a booth for figures to sit in.
