There wasn't one company doing all the uniforms during the war. There were literally hundreds of small (and big) companies doing these. The military gave the directive: Make it look like "Feldgrau". And they did. Lots of different shades existed already from different production batches.
Then some colors faded faster than others. Some fabric faded faster.. some uniforms saw heavy wear during the mud/winter period so these would look different than uniforms distributed in a summer batch.
With germans you really can't go wrong with your color as long as it somewhat looks like Feldgrau in general.
To recreate that exact shade like on the pic i would try Vallejos "Green Grey" model color mixed with the Feldgrau paint.
