Much like you did, I also found that working on digitigrade legs(I think that's the right term) at this particular scale is a total pain in the ass. I came up with pic related a while ago. They were meant to be legs for Blade Wolf but I've upped the scale of model since then so this design isn't much use to me now. So I thought I'd share, maybe you could get some inspiration or some other use out of them.
And you definitely wouldn't want to go for snap joints at this scale, like you said, they would be way too bulky. As for the overuse of mixel joints, I wouldn't fret too much about it. There's nothing inherently wrong about them, and if they're good for the scale that you're working at then there's really no reason not to use them.
