Ralph McQuarrie's artwork was just a stepping-off point for John Barry, Joe Johnston and Roger Christian, who were just as instrumental in the look of Star Wars (especially the whole "used universe" vibe).
And while Gary Kurtz did great work on Star Wars, he totally shit the bed on Empire - that film came in double over budget and double over schedule, which caused Lucas to freak out and shut down the whole operation after ROTJ.
