I recommend the Tamiya T-55 if you are, it's really really good.
If you're already experienced/autistic then either the Takom (if you can find one) or Trumpeter T-55 or T-62.
If you want amazing quality but hard mode/want to suffer for the best get the mini-art T-55, either with full interior or without interior.
Generally for any other cold war era MBT Trumpeter is your best and sometimes only bet.
Don't buy Zvezda (unless it's their T-62) it's all reboxed ancient garbage in terms of any Cold War MBT's. Tamiya outside of the T-55 should not be your first choice as most of those kits are old by now and riddled with small accuracy issues (the T-62 is especially especially atrocious, literally a fantasy tank).
If you don't mind full interior and want a T-72 series or T-90 I highly highly recommend Amusing Hobby, their kit is amazing, they also make a T-72 without the interior through Das Werk. And if you consider late T-72BX variants (and the T-90) to be "late cold war" then I highly highly recommend Meng as their models are 10/10 in terms of detail but enough ease in buildability that it doesn't feel like a chore.
If you want a late T series (ie T-72b3) highly recommend against Trumpeter, they are good for anything earlier but their modern Russian MBT's are kind of a chore to build with a ridiculous amount of unnecessary small parts
