Here's a great example. The character models in the Titanfall video game series weren't 3D modelled, they were kitbashed from various action figures before being 3D scanned into the game. Obviously this is on the high end professional tier of the craft, but you can absolutely do creative things like this with lego/bionicle parts as well.
