Real animals are actually fun to play with and do shit with, that we can monitor, learn from, and teach to do tasks for us.
Stuffed animals because kids get to role play as some other creature, get into its mind, and learn how to hunt them. Role playing is very important and common thing to see. IT's sorta like how cave drawings are thought to be some sort of calling or ritual to bring the animals to the hunting grounds. It's something humans like to do and could weirdly be innate.
