Past the typical cracked pepper and sea salt, I like lemon zest and smoked paprika if I'm feeling fancy, a bit of diced sweet pickles and celery if I want some crunch and brightness, and crumbled up chips if I'm feeling trashy. Oh, and if you have an Asian market near you, I highly recommend looking for some Kewpie Mayo. Automatically ups your egg salad game, that stuff is so good and so different than the taste of American mayo. It makes great tuna salad too.
