They are relatively small sets and don't even feel like the 400-500 pieces they consist mostly of due to part sizes. You're mostly paying for the convenience of someone having the parts all together for you as well as the design of the model. I understand their pricing and how it's hard to design and sell custom Lego sets and make any form of profit. Few people do it.
All the same, with a $200 budget, you could easily make 2-3 of the same tank just ordering the parts yourself on bricklink. There are plenty of nice looking, free instructions and parts list of the same model tank. Found this just looking around:

I love the new War Rig Mad Max set they've designed. I wish I could just buy the instructions for $30 and source the pieces myself rather than having to buy a $855 model. I can't justify that.
