Thinking on this a little bit, and knowing how autistic Lamborhigni is about their cars, I bet being able to alternate to an unmodified-looking countach was a design requirement set by them if Takara was to use the car's likeness. Despite Sunstreaker pretty much never having been seen without the custom engine in any original G1 media.
If so I'd imagine that was a MASSIVE hurdle to cross in designing him. Things are cramped as hell with the engine hidden inside.
