Nowadays, cowboys are racist or some shit, as viewed by pink haired tattoo'd weirdos, so there's even less of a reason to make anything about that. It's also a nostalgia eclusively in America, so even with some Japanese people taking interest, it's a niche of a niche market in reality, even old samurai and knights have limited appeal.
That being said, Red dead 2 rekindled the interest for some Americans, and if the Arthur stuff does well there might be more of it.
Now that I think of it, hateful 8 got some figures, but they were banned, so who knows if they're attainable for cheap, they're also shitty figures. Your best bet are the red dead 12 inches, and custom 12 inch stuff I'm afraid.
