I think my choices are milquetoast, but there are so many staple characters that could use updates at this point I find it hard not to choose the obvious. Diving further into the EU or OT background characters seems pointless right now. A new Bespin Luke would excite me more than ANH Luke but I still think the old one is decent and it would make more sense to do a Tatooine Luke now.
