The set design itself is better than ever, with the Ninjago Movie line being one of the best ones (if not even THE best) ever created but as you said, due to the high demand their "only the best is good enough" slogan turned into "...good enough..." and they are more about quantity than quality.
The latest widely reported issue is that the print on minifigs gets applied way too thin, resulting in them looking like bootlegs, with the Lady Irondragon figure from the Ninjago sets being the most notorious example (left is the product image from Lego, right the actual thing) but reviewers have reported that tons of other figures like Lobo or Hawkgirl from the DC superheroes sets also have that problem.
