I completely agree with you, there's too much light ghost grey in plane modelling and it bored me to death to see the same god damn Tamiya F-16C in the same god damn livery every time. That's really the driving force behind my replicating video game liveries, mostly Ace Combat. I also used to fly r/c planes (no space in the flat to store any atm so it'll wait) and they more often than not look like pic related and not just low viz grey.
I could recommend you some real life military subjects with interesting colour schemes, all the display teams come to mind for one, but I really recommend just going nuts and doing what noone else bothers with. It's also way more difficult to paint pic related than it is to paint light ghost grey.
