There are about 4 screw holes you need to remove to access the knee. The person who has the broken knee from tfw2005 did not mention any glue so I think you can open knee up without any additional efforts.
There should be a lot of ways to secret the moving plate. The easiest is probably some gap filler that fill the whole section and lock the plate under the gap.
Epoxy glue with filler part should do the job too but I don't know how strong epoxy is under continue play.
