Customs come from >multiple figure parts>sculpting clay>paint. A lot of in between utensils and applications that are necessary to finish off stuff so there is a lot of room for mistakes and bad quality.
Customs on Ebay are mostly cheap. They are made specifically for quick cash. The quality is hit or miss and the clay sculpting is never noteworthy. Paint chips fast because its not applied properly.
Figure-realm has some customs you could look at and certain artist are willing to do commissions on there.
Dbzfigures.com has mostly amateurs customs but then again most aren't shilling on that board trying to sell them.
If your serious about customs you have to be able to dump a lot of money. Even the low quality listings on ebay that are just someone painting over son goku or vegeta can cost you 200 or more.
Ferry tale customs is probably the one artist who is mad consistent with his work. He skips clay when it isn't needed and does great paint work. Expensive like eBay but its considered artwork and the most consistent guy in dbz customs is ferrytale hands down.
