The stability should reach a point where I can pick up and pose the MOC without anything falling off but not to the point that official LEGO sets do. Also, I try to put in articulation where I'm able to without sacrificing too much aesthetically and/or structurally.
I'm personally not a big fan of half-connected pieces or pieces that are just lying on top of one another. I'm not denying the cool-looking effect it has on some MOCs I've seen, but It's not something I would make use of.
