In chickens and other animals with legs shaped like them they relief on tendons to stabalise the leg and keep it from collapsing. You can do that with a plastic figure. You have to come up with some way lock the knee because the animal has so much weight in in front of it's knees. Humans are just columns basically so you can have simple joints on a figure and they can stand easily.
With quadrupeds the front legs tend to be more collumn like and the back legs more bent. You don't have to worry about the leg joints collapsing because their weight is evenly distributed.
