The exception being some of the modern lion knights of the late 90s-present. If you want accuracy, you need to pick a period. Chances are you want 14th Century, which is the time period of most lego medieval, since they have shields and the classic visor helmet is similar to a bassinet. If you want a realistic variety, you pretty much have to use stuff from all over the periods. Brick warriors are the best alternative helmets in my opinion. The hound snout bassinet is probably the best one and would spice up a mixture of your knights with the most accuracy. Second being the Sallet helmet, however that doesn't' really see prominence until post-1450s at which point there are absolutely no shields even on mounted knights. However, mixing it in will still look good. In terms of painting and kit bashing, you should probably do it yourself and look up stickers to make surecoats for them.
