The head is connected by ratchet hinges (like the ones on Toa Mata Nui's fingers). The gears are a pain in the arse to install and remove, but they're just there for looks and to fill up the gearbox. Put axlepins on the inside of each shoulder and attach gears to those. Slot in the back gear and push a 2L axle through to hold it in place.
