So from what it looks like, the one that has the rotating cockpit is actually a later, more advanced Fang Fighter, the "Fang fighter 2.0".
The Mandalorians in the show, because they are mercenaries with limited resources, are probably flying the older version that has no spinning cockpit and have the cannons ontop of the wings.
