The falcoom is about twice as long as the gunship in terms of canon measurements(34m versus 18m) so UCS gunship to be minifig scale it would need to be roughly half the size of the UCS falcon.
The 2017 UCS falcon is 84 cm long so an in scale gunship would have to be somewhere close to 42 cm.
Pic related is 48 cm long. Making a highly detailed accurate set at this scale is doable but it would look puny compared to the rest of the line., about the size of the UCS A Wing or Snowspeeder.
