I can understand not wanting to miss out on good lots you see online so like I said make progress and allow yourself to buy something here and there to scratch that itch, but remember this also deepens the hole you're in unless you've made significant progress.
if it was me, I'd start by just picking a bag/box and sorting into some general categories. maybe 5 or 6 vague categories that you can later break down into more specific groups for storage/use. it will become easier the more you do it, unfortunately you just have to not be a bitch and just do it. after a while you will have it at least somewhat sorted, then you will just go from there and sort group A down into smaller categories, store it, then move on to the next, etc. you'll have time for building later and it'll be much much easier to do so because things will be sorted. it's gonna take time and a lot of storage, but you'll get through it. literally just do it, you made the problem now fix it.
