The qualities of more expensive figures are usually:
-higher number of pieces meaning better articulation, separate overlaid sculp details, more accessories...
-better quality plastic meaning the figure is less gummy and won't crumple under its own weight, nicer movement of the joints, better tolerances where nothing is too tight or too loose, sharper details in the plastic...
-more and better paint applications, as cheaper figures may leave details straight up unpainted or with blurry paint apps, sometimes mispaced ones that pass the QC...
-better artistic sculpt and articulation engoneering as they theoretically hire better sculptors, though this is the area where sometimes a cheaper figure btfos the more expensive one.
Hasbro and McFarlane are the reference for cheap figures. From there you'll have to see what other brands offer for their price and whether it's worth it.
