First you have to understand two things.
1, you can easily divide everything into Kajishima Canon, and Everything Else.
2, we don't get jack shit in the States.
The Kajishima Canon is the core of the franchise, the living series headed by Masaki Kajishima that is getting added to as recently as last week. This is all one continuity with a clear timeline, but multiple protagonists(4 so far), each with their own harem of mostly older women.
It consists of the OVA series, retroactively named Tenchi Muyo Ryo-Ohki, GXP, Isekai no Seikishi Monogatari, Dual Parallel Crisis Adventure, Paradise Wars, the True Tenchi novels, and some extra material he publishes at Comiket, neat but inconsequential background info and ideas he's hammering out.
The True Tenchi novels(so called because there are other non-canon books like Hexagram of Love) contain pretty fucking important background info and were written in 1997. They were not officially translated until 2018.
GXP was made as an anime first, but Kajishima didn't like Nabeshin's direction and started writing a LN series to supplant and correct it. That said, the anime is mostly accurate to the books over the material it covers, some events proceed differently, some new characters are introduced and existing characters given more importance, and covers events beyond the scope of the anime. 17 volumes so far, with 14 covering the events of the anime.
Everything Else is stuff that other people had control over because Kajishima isn't the sole rights owner. They are mostly isolated settings, though Tokyo is a little fuzzy on where and what it splits off of.
This includes Tenchi Universe(Tenchi TV), the movies, Tenchi in Tokyo(Shin Tenchi Muyo), Ai! Tenchi Muyo, any of the Pretty Sammy series, some books and manga, and probably one or two more things I'm missing.
