a big part of it is "the experience" of picking the pieces, going to the workstation, assembling it, picking extra bits and chips. you're not just paying for the droid, it's the whole thing, if that makes any sense. (the lightsaber building is the same type of thing)
sorry for the bad reply, I know there's a ton of money involved with the whole trip and all. Even park tickets these days are more than the cost of the dang droid.
and just keep in mind regular Disney website will sell the basic R2-D2 and BB-8 verisons, if you feel like painting them or whatever.
